Preparation of the Marzipan Base
The process begins with a carefully balanced mixture of premium almond flour and fine sugar. These ingredients are blended with a binding agent—typically syrup — to achieve a silky, pliable consistency. This step is crucial, as the quality and texture of the marzipan set the foundation for intricate shaping and detailing.

Colour Mixing
Using high-quality, edible food colours, the marzipan is divided into small batches and kneaded by hand to integrate the pigments evenly. This step requires experience to achieve natural hues, such as a lime’s subtle green or the deep red of a cherry. Gloves are worn throughout to ensure cleanliness and prevent staining.
Shaping the Designs
At this stage, the marzipan comes to life. Angelo and Francesco use small sculpting tools, moulds, and their hands to shape marzipan into forms resembling fruits, vegetables, creatures, and other creative designs.
